Golubushka (Little Dove)

Cut a small wedge out of a Key lime and set aside. Juice the remaining lime into a mixing glass with 2 ounces St Petersburg Vodka and 1/2 ounce ginger syrup*. Add ice and stir to combine. Pour into a Collins glass and float with grapefruit soda or grapefruit sparkling water. Garnish with reserved lime wedge.

*To make ginger syrup, bring 1/2 cup Demerara sugar and 3/4 cup water to a boil over high heat. Stir until sugar is dissolved. Remove from heat, and add 2 ounces freshly-chopped ginger. Let steep 30-45 minutes. Remove ginger and pour into glass containers or dispensing bottles.

In a shaker with ice, combine 3 ounces St Petersburg Vodka, 1/4 ounce fresh lime juice, 1/4 ounce simple syrup, and 4 torn basil leaves. Shake well and strain over ice into a martini glass.

St Petersburg Vodka

St Petersburg Vodka has been enjoyed and appreciated by Russians since the time of Peter the Great, and this rendition of the classic has proved to appeal to the American palate, winning gold across the board in an array of Beverage Testing Institute competitions. And yet, the St Petersburg brand is very reasonably priced. Evidently the product of care and expertise, this Russian classic is produced from early-sprouting winter wheat, crystal clear water, and a long tradition of quality distillation. Serve it straight or slightly chilled.

Tasting notes: Neutral mineral water and cream aromas follow through to a very smooth and silky dry, medium body with delicate spiciness. Finishes with a smooth, elegant mineral note and powdered sugar. Superb. 40-percent ABV.
